Step 1
Preheat oven to 200
Step 2
Combine 1/2 c flour, corn starch, paprika and some pepper in bowl. In separate brown pour 1/2 c milk.
Step 3
Season stake with salt on both sides. Dredge steak in flour, then milk, then flour. Use a fork to help adhere. Set aside for 10 minutes to let breeding set.
Step 4
In medium skillet melt butter over medium heat and cook until foaming. When it subsides whisk remaining flour and cook until bland and no raw smell. Whisk in broth and remaining milk with pepper and sage. Cooking while stirring for 7-10 minutes.
Step 5
Place parchment paper sheet in air fryer and spritz with oil. Working in batches place steak in and spritz with oil. Cook at 400 10 minutes flipping 1/2 way through. Place in oven to keep warm.
Step 6
Place steaks on plate and spoon over gravy. *gravy thickens as cooled; therefore, warming again to thin may be needed.
