Instructions

Step 1
Preheat oven to 400 degrees. Combine the chicken, 2 cups of the cheddar, 1/2 cup of the enchilada sauce, the chilies, and cilantro. Season with salt and pepper
Step 2
Stack the tortillas on a microwave safe plate and cover with slightly damp paper towel. Microwave until warm and pliable, about 40 to 60 seconds
Step 3
Place 1/3 cup of mixture evenly down center of each tortilla. Tightly roll the tortilla around the filling, then lay seam side down in a 9 by 13 inch baking dish lightly coated with vegetable oil spray
Step 4
Lightly spray enchiladas with vegetable oil spray. Pour 1 cup of remaining sauce over enchiladas to coat thoroughly. Sprinkle remaining cheese down the center of the enchiladas
Step 5
Cover the baking dish with foil and bake until the enchiladas are heated through, 20 to 25 minutes
Step 6
Remove the foil and bake until the cheddar browns, about five minutes longer
Step 7
Serve, passing one cup of sauce and any toppings separately
