Step 1
Preheat your oven to 350 degrees

Put foil on a baking sheet and lightly drizzling it with olive oil
Step 3
Add your onion, garlic, tomatoes, and broccoli to the baking sheet
Step 4
Sprinkle salt, pepper, and Italian seasoning over the vegetables
Step 5
Wrap the vegetables in the foil and fold any loose ends closed so that the vegetables can roast
Step 6
Put your veggies in the oven for 45 minutes, or until roasted (may vary by oven)
Step 7
Remove your roasted veggies and add them to a blender along with your fresh basil, and blend everything to your desired consistency - I usually blend for 30-45 seconds to leave it a little thicker
Step 8
Add the mixture to a soup pot with olive oil and let it simmer, stirring in your optional coconut cream. Add salt and pepper for flavor as needed then plate it and top it off with goat cheese, olive oil, and more fresh basil. Enjoy!
