Brownie Batter
1 cupUnsalted Butter
melted
3eggs
room temperature
1 cupsugar
1 cupbrown sugar
1 Tbspvanilla extract
1 TbspCoffee Powder
or Espresso
1 cupall purpose flour
¾ cupDutched Cocoa Powder
1 tspsalt
1 cupsSemi-Sweet Chocolate Chips

Instructions
Prepare Brownie Batter
Step 1
Whisk together melted butter, eggs, vanilla, coffee, and both sugars until it turns a lighter brown color.
Step 2
Add in flour, cocoa powder, and salt. Mix until almost combined.
Step 3
Finally, add in your chocolate chips and mix until just combined.
Step 4
Set Aside.
To prepare graham cracker crust and bake
Step 5
Combine crushed graham crackers and 4 tbsp of melted butter. The mixture should hold its shape when pressed down, but also NOT be soggy.
Step 6
Add 1 tbsp of the graham cracker mixture to the bottom of your cupcake liners and press down firmly.
Step 7
Next, top the graham cracker crust with your brownie batter. Make sure to fill it almost to the top.
Step 8
Bake in a 325F oven for 25-30 minutes. Just until the center is set.
Step 9
When they are done baking, let them cool and set. If you want to remove the wrappers before serving, I reccomend you let them sit covered for 2-3 hours minimum. The middle will be super fudgey, so if you remove earlier, they may fall apart.
To prepare meringue topping
Step 10
Combine eggs whites and sugar in a heat safe bowl.
Step 11
Place them over a double boiler and whisk continuously.
Step 12
As soon as the sugar is fully dissolved and the mixture is smooth, pour it into your stand mixer or grab your hand mixer and mix until soft peaks. Add in your vanilla when it is almost done.
Step 13
Pipe it on top of your brownies and then use a kitchen torch or your oven on broil to toast the meringue. If you use your oven, set the oven to HI broil, let it preheat and then pop them in there for just a few minutes.
Step 14
