Ingredients
4 servings
3 cansfrozen corn
1russet potato
peeled and diced
3stalks celery
chopped
1 cuponion
diced
1 cupcarrots
sliced
1 tablespoonminced garlic
16 ozvegetable broth
3 cupsplant milk
2 teaspoonssmoked paprika
½ cupnutritional yeast
1 cupvegan cheddar cheese
plus more for garnishing
2 teaspoonssalt
1 teaspoonpepper
olive oil
for sauteing vegetables
parsley
for garnishing
Instructions
Step 1
In a large stockpot, add about 3 tablespoons of olive oil and saute the onions, celery, carrots, and garlic over medium-high heat, stirring occasionally.
Step 2
Once the vegetables are soft, add the potatoes, corn, vegetable broth, plant milk, salt, pepper.
Stir in the smoked paprika, and nutritional yeast and bring to a boil.
Step 3
Once it starts to boil, lower the heat to simmer and cook until the potatoes are soft, about 20 minutes.
Step 4
A few minutes before serving, add the vegan cheddar cheese.
