Step 1
Mince the garlic cloves, and crush the fresh thyme and rosemary. Mix the salt, ground pepper, minced garlic, crushed herbs, and olive oil.

Place the lamb in the seasoning and turn it so that both sides are coated. Then, leave it at room temperature for at least 30 mins.
Step 3
Put the lamb french racks on a roasting pan and place it on the 3rd level of the oven.
Step 4
