Instructions
Step 1
Add the sugar and yeast to the milk and mix then let sit for 10 mins
Step 2
Mix the flour, salt, and lard in a large bowl, and can also add nigella seeds if you like
Step 3
Pour the liquid mix into the bowl and mix through then knead for 10 minutes
Step 4
Leave in a bowl covered with cling film at room temp for 1-2 hours til doubled in size
Step 5
Divide into 12 even balls and press flat into a 2cm high disk on a tray with the half the semolina on. Sprinkle the rest of the semolina over the top then cover with cling film and let sit at room temp for 1-2 hours til doubled in size again
Step 6
If you want it to be easier, you can roll all the dough on a semolina lined tray to 2cm thickness and dust the top with semolina then cut out into rings with a mould or glass but there will be wastage
Step 7
Heat a frying pan to medium heat and fry the muffins in batches with the lid on for 3-4 minutes a side
Step 8
