Ingredients

2.25sugar pumpkins
2shallots
diced
3 clovesgarlic
minced, divided
2 cupsvegetable broth
1 cuplight coconut milk
2 TMaple syrup
or agave
¼ tsppepper
¼ tspsea salt
¼ tspcinnamon
¼ tspnutmeg
Garlic Kale Sesame Topping
Instructions
Step 1
1. Cook pumpkins in microwave
Step 2
2. To a large saucepan over medium heat add 1 Tbsp. Olive oil, shallots and garlic. Saute.
Step 3
3. Add remaining ingredients, including pumpkin, and bring to a simmer.
Step 4
4. Transfer soup mixture to blender and blend until smooth.
Step 5
5. Pour soup back into pot and continue cooking. Make topping.
For the kale sesame topping:

1. In a small skillet over medium heat, dry roast the sesame seeds for 2-3 minutes, until golden brown. Remove from pan and set aside.
Step 7
2. To the hot pan, add olive oil and garlic and saute until golden brown. Add kale and toss, then add a pinch of salt and cover to steam. Cook until kale is wilted and add sesame seeds back in.
Step 8
3. Serve topping over soup.
