Ingredients
4 servings

4salmon fillets
medium, please make it wild salmon, skin-on or off

¼ cuplow sodium soy sauce
or coconut aminos

2cloves garlic
finely minced

¼ cuppure maple syrup

2 tablespoonsDijon mustard
or HoneyCup mustard

2 teaspoonsoil
like olive, or grapeseed

pink himalayan salt
to taste

fresh ground pepper
to taste
Cucumber Salad
Instructions
Step 1
Preheat the oven to 400 degrees and line the sheet with parchment paper.
Step 2
In a small saucepan, whisk together the soy sauce or coconut aminos with garlic, syrup, and mustard. Cook over medium heat until it's reduced by half. This will take about 5 minutes.
Step 3
Rub the salmon with the oil and season with salt and pepper on both sides. Place the salmon skin-side down on the parchment paper and brush lightly with the soy glaze.
Step 4
Bake the salmon for 5 minutes, brush with more glaze, and continue to cook to your liking. If you like it slightly undercooked it’s about 3-4 more minutes.
Step 5
For the cucumber, topping mix together the cucumber, sesame oil, lime juice, and sesame seeds, scallions and lots of salt and dill.
Step 6
Serve the salmon with a little more glaze and the cucumbers
