Instructions
Step 1
Cream the sugar and the shortening, beating well with an electric mixer until light and fluffy. If your egg is cold then place it in a cup of warm tap water.

Meanwhile, Ina separate bowl mix together the flour, baking soda/powder, salt, and spices.

Beat the molasses and the egg into the butter and sugar mixture

Gradually beat in dry ingredients until just combined. Do not overmix
Step 5
Cover and chill in the fridge for at least 2 hours, or up to 2 days.
To bake
Step 6
Preheat oven to 350° F. Line a baking sheet with parchment and fill a small bowl with 1/2 cup of sugar.
Step 7
Scoop heaping tablespoons of batter (or weigh out to about 28 grams) and roll into balls
Step 8
Roll the balls in the sugar and place on a baking sheet two inches apart.
Step 9
Bake for 12 minutes and then let cool on the cookie sheet for 5 minutes. Transfer to a rack to cool completely.
