Instructions

Step 1
Lightly toast the almonds on the pan or in the oven.
Step 2
Wash kale and basil thoroughly.
Step 3
Add all the ingredients to a food processor and pulse to create a paste. You want to keep a bit of texture.
Step 4
If using a blender, you might need to add a bit of cold water (you can also use the pasta water if using gluten)
Step 5
Once the pasta is cooked, mix through the pesto.
Step 6
Add some roasted veggies, a couple of basil leaves and lemon zest to garnish. Here we also crumbled a little bit of vegan feta
