Step 1
Cook your pasta according to the package.
Step 2
Roast the walnuts in a small pan without oil. Remove them from the pan and put them by side.
Step 3
Cut your onion and mushrooms in slices, then heat up olive oil in a large pan. Add the mushrooms together with the onion and sauté for about 3 minutes until lightly browned.
Step 4
Now add the garlic and fry for another minute. Pour over soy sauce and vegetable broth and let them cook for 2 minutes.
Step 5
Add spinach leaves and cook for another 2-3 minutes until it has wilted. Season everything with salt, pepper and paprika.
Step 6
If you’re Pasta is ready, get them out of the water and put the drained pasta into the pan. Combine everything.
Step 7
Add the pasta to the plates and serve with them walnuts and nutritional yeast or Parmesan.
