Instructions
Step 1
Cook the quinoa as per packet instructions for about 20minutes.
Step 2
Add salt. Drain off any excess water.
Step 3
Put back on the stove and add the mango pieces.
Step 4
Add more water to prevent burning but cook for a few minutes until the mango has defrosted.
Step 5
Add the mint at the end and fold through.
Step 6
Top with a splash of honey or maple syrup if desired.
