Instructions

Step 1
Combine all sauce ingredients in a small saucepan. Bring to a boil. Reduce heat and simmer over medium for about 10min (long enough for the flavors and heat from the peppers flavor the vinegar). Set aside to a nd let cool while you cook the fish. The escovitch sauce can be made up to 3 days ahead of time.
Step 2
Sprinkle jerk rub on both sides of fish and pan fry, grill or broil
Step 3
Serve over rice, top with the spicy pickled vegetables
