Instructions
Step 1
Grill the chicken and corn on the cob. Cook spaghetti. Drain noodles and set aside.
Step 2
Spiralize the zucchini into noodles and slice the cherry tomatoes in half. Add to a pot over medium heat and toss constantly for 2 minutes.
Step 3
Remove from heat and add the cooked whole wheat noodles and pesto sauce. Stir until well combined.
Step 4
Weight everything and divide by number of servings. Cut charred corn off the cob and divide between servings equally.
Step 5
Add one serving of the pesto pasta to a plate or bowl, top with 2 oz grilled chicken and the corn. Season with salt, pepper and lime juice, then garnish with fresh basil.
Step 6
Enjoy warm or cold.
