Instructions
Step 1
cut the tomatoes in half and mix with diced spring onion, some chopped basil, a grating of parmesan and a little diced red chilli.
Step 2
Make the pesto dressing by making 1 tbsp 0% yoghurt with 1 heaped tbsp pesto, 1 tsp garlic puree, lemon zest and juice, season with salt and pepper. I also add 1 tsp EVOO for freshness.
Step 3
Cook the pasta to packet instructions in salted water. Use 1 - 2 tbsp of the hot pasta water and spoon into the tomato bowl, mixing well.
Step 4
Combine the drained pasta with the tomato mix, pesto, protein of choice and rocket. Serve with an extra flurry of parmesan.
