Instructions

Step 1
Preheat oven to 425 degrees Fahrenheit

In a pot, add water and let come to a boil. Once boiling, add chicken, carrots, peas, and celery. Let boil for 15 minutes. Drain and set aside.
Step 3
In a saucepan over medium heat, melt butter and cook onions until soft and translucent. Add garlic, cook until fragrant. Stir in flour, salt, pepper, and celery seed. Cook until flour is golden in color. Slowly stir in chicken broth and milk. Simmer over medium low heat until thick. Add more saly and pepper to taste. Remove from heat and set aside.
Step 4
Place one pie crust in bottom of tin. Poke holes in the crust with a fork all around the bottom. Place parchment paper topped with 1 cup of beans on the pie crust. Make sure crust ends are covered. Cook in oven for 10 minutes or until crust is slightly cooked.
Step 5
Place the chicken mixture in bottom of pie crust and lay flat with a dome in the middle. Pour liquid mixture over top of chicken mixture. Cover with second pie crust, seal edges, and cut away excess dough. Decorate as you’d like, ensuring there are several small slits in crust to allow steam to escape.
Step 6
Separate yolk from egg whites. Place yolk in a bowl and mix with water. Stir until combined. Gently brush egg wash over top pie crust and edges.
Step 7
Bake in a preheated oven for 30-35 minutes, or until crust is golden brown and filling is bubbling. Let cool for 10 minutes before serving.
