Instructions
Step 1
Rinse and drain the split peas. Place peas in a large pot with 6 cups of water, chicken broth, onion, garlic, lemon juice, sugar, parsley, thyme and salt and ground white pepper to taste. Bring to a boil, then reduce heat and simmer for 1 hour and 15 minutes or until the peas are soft.
Step 2
• In another large saucepan, combine the barley with 6 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour and 15 minutes or until the barley is soft and most of the water has been absorbed.
Step 3
• When the split pea mixture is thickened, drain the barley and add it to the split peas. Add the carrots and celery. Simmer until the carrots are tender, stirring occasionally. Turn off the heat, cover, and let it sit for 10 to 15 minutes before serving. Garnish with chopped green onion
