Stuffed Crust Chinese Burrito

A double wrapped burrito, with a stuffed crust of crispy duck and cheese, then filled with egg fried rice, salt and pepper chips, crispy chilli chicken, guacamole, prawn crackers, and fresh Chillies.

Instructions

The Duck

Step 1
Coat the breasts in the salt, five spice, and hoisin sauce, and oven roast at 180C for 30 minutes
Step 2
Allow to cool for 10 minutes, and shred with 2 forks.
Step 3
Pour all the duck juices into a hot wok and add in the shredded duck to crisp up for 2-4 minutes.

The Crispy Chilli Chicken

Step 4
Mix the cornflour with the salt and spice in one bowl and whisk the egg in another.
Step 5
Chop the chicken breast into 1 inch cubes and drop into the cornflour mix, then into the egg, and back into the cornflour.
Step 6
Heat enough oil to cover the bottom of a frying pan on a medium heat, and drop the chicken in and cook for 3 minutes per side, then take out and drain.
Step 7
Slice the onion and pepper into strips and fry for 2 minutes on a high heat.
Step 8
Slice the garlic thin and add this in and fry for a minute.
Step 9
Add the sauce and chicken and stir fry for 2 minutes to coat everything.

The Salt and Pepper Chips

Step 10
Oven cook the chips as per instructions.
Step 11
Chop the onion and pepper to the desired size and fry on a high heat for 2 minutes.
Step 12
Slice the Chillies and add these in with the spices and salt and chips, and toss to thoroughly coat

The Fried Rice

Slice all the vegetables into small cubes and stir fry for 5 minutes until soft, add the ginger, garlic and chilli for 1 minute, and then turn out the wok onto a plate.
Step 14
Add the eggs into the wok and cook almost through before adding back the vegetables and the rice with the spices and sauces, and toss through for 2 minutes to combine and warm the rice.

To Assemble

Briefly toast the tortillas to warm up

Lay down the half the crispy duck and cheese on the tortilla, and lay another wrap on top and press down.

Lay down half the fried rice, salt and pepper fries, crispy chilli chicken, guacamole, prawn crackers and fresh chopped chilli.
Step 18
Fold over the sides and wrap around into a burrito, and place seam side down on a pan on a low heat and cook for a few minutes to seal, and other sides after.
Step 19
Repeat for the other half of the ingredients, and you’ve got 2 bangin burritos!
Step 20
Slice through at an angle and top with sriracha.
