Step 1
To the basic ingredients above, you can add other low cal ingredients, like fine chopped onion and mushrooms, a little kale or spinach, and seasonings to taste, every meatloaf is different. I usually add a tsp of garlic powder, dash of black pepper, half teaspoon of salt, 2-3 tsp Italian herbs, and a little thinned tomato paste or ketchup. Mix by hand thoroughly. Using a steamer basket, form into a ring with a hole in the middle, so it cooks evenly. Put a cup of water or broth in the bottom of the instant pot. You can also add large chunks of chopped veggies and put the steamer basket on top of those. Pressure cook for 9 minutes only, let rest 5 minutes, and release steam. For a little more color, lightly baste with bbq sauce or ketchup and let sit a few more minutes in warm pot. Around 45 calories per ounce, using 90/10 beef.
