Makes 2 amazing breakfast burgers with sausage patties, chorizo, bacon, egg and cheese, with spicy Aioli and Guacamole

Instructions

The Guacamole

Step 1
Finely dice the onion, coriander, and chilli, and crush the garlic
Step 2
Peel and deseed an avocado and mash
Step 3
Add in all the ingredients to the avocado and mash, adjusting the flavour with salt and lime juice to your preference

The Spicy Aioli

Step 4
Crush the garlic and mix with all the other stuff.
Step 5
Adjust the flavour with salt and lemon juice to your liking

The Rest

Step 6
Remove the skin off the pork sausage and form 3 sausages worth of meat into a patty.
Step 7
Fry the patties for 3-4 minutes a side on medium.
Step 8
Cool the chorizo style sausages for 2 minutes a side, then cut them in half and fry the inside for 3-4 minutes. You will need 3 half sausages per burger

Fry the bacon for 3 minutes a side
Step 10
Crack and fry the eggs for 4-5 minutes
Step 11
Add the cheese to the sausage patties when you flip them
Step 12
Cut the brioche rolls in half, lightly butter, and add to a pan to toast for 2 minutes.
Step 13
Layer the fillings, with the egg on top so that the yolk can run down the other ingredients

Add the spicy Aioli to the top bun
