Instructions
Step 1
Drain the water from chickpea can. Add the chickpea to boiling water. Simmer for 20 mins until soft with less water left.
Step 2
Grind the 4-6 cloves of garlic and 1 small piece of ginger with water and salt. This becomes "garlic ginger water" for seasoning later
Step 3
Fry minced pork with minced garlic, ginger and spring onions. Add in doubanjiang, tianmianjiang, a dash of dark soya sauce.
Step 4
Prepare the base sauce for the noodles: salt, black/ white pepper, sichuan peppercorn, roasted peanuts, sesame oil, chilli oil, soya sauce, sugar, dark vinegar, garlic ginger water.
Step 5
Pull the cooked noodles directly to the base sauce. Top it with cooked minced pork and chickpea paste, a bit of chopped coriander and spring onion. Optional add in boiled lettuce and fried eggs too.
