Butterflied, each small roast is approx 2 lbs You can also use one 4-4 1/2 pound boneless leg
sea salt
to taste
black pepper
to taste
1 cupolive oil
¼ cupred wine vinegar
2 bunchesItalian parsley
remove the stems
1 Tbspfresh oregano
leaves only chopped you use dried oregano cut back to 1 t
2 clovesgarlic
use more if you like a heavier garlic flavor
1 Tbspred pepper
fine dice
1 tspsea salt
to taste
¼ tspblack pepper
to taste
¼ tspred pepper flakes
optional, use more or none depending upon your tastes
