Ingredients
4 servings
4 x 4 ozsalmon filets
or swordfish
2 Tbsplemon juice
salt
to taste
pepper
to taste
4 Tbspavocado oil
for frying
For the Avocado Basil Pesto:
Instructions
Step 1
Place salmon in a dish to marinate. Drizzle with lemon juice and season generously with salt and pepper. Let the salmon marinate while you prepare the sauce.
Step 2
Combine all ingredients for the sauce in a blender or food processor, and blend until smooth.
Step 3
Add 2 tbsp avocado oil to a skillet and heat over medium-high heat. When the oil is hot, add the marinated salmon. Fry about 5-7 minutes on each side, depending on thickness.
Step 4
When done, plate the fish and serve with avocado basil sauce over the top. If you like, serve with a side of fresh salad greens.
