Tuscan Salmon with a little Spice

Instructions

Step 1
Dry the Salmon fillets on kitchen paper.
Step 2
In a large bowl add the Paprika, Oregano, Salt and Pepper, Tandoori Masala and olive oil and mix.
Step 3
Place the salmon into the bowl and coat in the marinade.
Step 4
Add a tbsp of olive oil to a large skillet or frying pan and heat.
Step 5
Add in the salmon fillets skin side first and cook for 3 minutes and then turn and cook on all the other sides for around 1 minute per side, once cooked remove from the pan and place on a plate.
Step 6
Add the butter to the same pan and melt on low heat.
Step 7
In the shallots and cook for 1 minute.
Step 8
Cut the tomatoes in half and add into the remaining marinade and then add to the pan with the chopped garlic and chopped chilli stir and cook for 3 minutes.
Step 9
Add in the spinach and torn basil leaves. Stir well and allow to cook for about a minute.
Step 10
Add in the vegetable stock and simmer for around 8-10 minutes or until the liquid has reduced and thickened.
Step 11
Add the salmon fillets back into the pan and add in the capers and allow to simmer for another 2 minutes.
Step 12
Ready to plate, serve with a side of your choice, I recommend New potatoes and tender-stem broccoli. Lick you’re lips and enjoy.
