Sausage and potato croquettes

Step 1
Start pan with a little water and salt and set to boil
Step 2
Peel and cut red potatoes and add to water cook until a little over done
Step 3
Grab skillet and out on med high heat. Chop up whole green onions (no oil), add 1/2 hot sausage and 1/2 mild sausage. Cook with top on until done. Chop up into small pieces and drain fat.
Step 4
Once potatoes are over done, strain and add to bowl. Mix with hand mixer in 3 TBS butter salt and pepper. (Do not add milk).
Step 5
Add sausage into mashed potatoes mixture, and let cool.
Step 6
Get pan and add all of the vegetable oil into it. Set power burner to 4. Let heat up.
Step 7
Form little oval palm sized patties from the mixture and set on plate.
Step 8
Get 3 blates, put flour in one, whisk 2 eggs in other, and put panko in the last one.
Step 9
Take a patty, roll in flour, drench in eggs and then cover in panko. Gently lower patty into hot oil.
Step 10
Cook for 30 seconds on each side.
Step 11
Remove onto plate with paper towel. Do not salt.
