Stir fry veggies with Satay sauce

Instructions

Step 1
Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered for a further 8 minutes. Do not lift lid during cooking.
Step 2
Heat a drizzle of oil in a large fry-pan on medium high heat. Stir-fry onion, carrot, courgette, capsicum and broccoli for 3-4 minutes, until tender. Remove from heat and toss thorough spring onions and mung beans
Step 3
While veggies are stir-frying, combine all the satay sauce ingredients in a small pot. Bring to a gentle simmer on low-medium heat and cook for 5 minutes, until sauce has thickened slightly
