This Tuscan Kale & Roasted Sweet Potato Salad is such a delicious and easy way to nourish your body. It’s high in fibre, contains 22g of protein and is a real nutrients powerhouse. With tender, roasted sweet potato chunks and the robust flavour of Tuscan kale, this one is a perfect mix of flavours and textures.

Ingredients
2 servings
2 cupssweet potato
roasted, diced
1 tspEVOO
1 tsppaprika
5 cupsTuscan Kale
1 ½ cupsbeluga lentils
cooked
1cucumber
sliced
6radishes
sliced
2 Tbspchopped almonds
½ cupfresh dill
vegan feta
optional
Dressing
Instructions
Step 1
Preheat the oven to 390 F (200 C).
Step 2
Combine the sweet potato, EVOO and paprika. Bake for 30 minutes. Allow to cool down.
Step 3
Combine the dressing ingredients.
Step 4
Remove the stem of the kale and chop into small strips. Add to a large bowl with half of the dressing to the kale and massage using your hands to “break” the kale.
Step 5
Add the sweet potatoes, lentils, cucumber, radishes, almonds, dill, plant-based feta (if using) and dressing. Mix well to combine and enjoy!
