KALE & WHITE BEAN SALAD (EREWHON COPYCAT)

I’ve been seeing Erewhon’s smoothies and salads everywhere on my feed, and it seems that wanting to go to a grocery store is not a good enough reason to be on the next flight to LA, I decided that the next best thing would be to attempt this kale & white bean salad at home. And I absolutely loved it! It is so easy, requires no cooking, tastes amazing and has great textures. It’s packed with healthy fats and is a very satiating salad option with 22g of protein. It contains many nutrients, including great amounts of vitamin C, vitamin K, magnesium and iron. It’s definitely earned a spot in my rotation 😍

washed and chopped, stem removed
1 ½ cupswhite beans
1avocado
diced
3 Tbsppumpkin seeds
3 Tbsphemp seeds
salt
to taste
pepper
to taste
Dressing
Instructions
Step 1
Combine the dressing ingredients
Step 2
Massage the kale using 1/2 the dressing.
Step 3
Add the beans, avocado, seeds, salt & pepper, and the other half of the dressing. Mix and enjoy!
