Peaches and Cream Stuffed French Toast

Instructions

To make the Peach Topping

Step 1
Combine water, sugar, and cornstarch, cinnamon and vanilla in a saucepan; bring to a boil over medium heat. Add sliced peaches and simmer for 2 minutes.

To Make the Stuffed French Toast

Step 2
To make the filling, in a small bowl, mix cream cheese and peach preserves until smooth. Set aside.
Step 3
Slice challah bread into thick slices. Make a deep slit in the bottom of each loaf. Pipe cream cheese and peaches mixture into each slice.
Step 4
In shallow bowl, whisk eggs, milk, vanilla, cinnamon and coffee creamer until well combined. Dip the sandwiches in the egg mixture, on each side.
Step 5
Melt butter in large skillet or on griddle at medium-high heat. Cook French toast sandwiches, on both sides, until golden brown, about 4-5 minutes each side. Serve warm with peach syrup and whipped cream.
