Instructions

Step 1
Add butter onion and garlic and cook.

Add all ingredients.
Step 3
Bring to a boil.

Reduce heat & simmer uncovered for 60-90 minutes stirring occasionally.
Step 5
Stir more frequently as soup thickens.
Step 6
Use immersion blender to mix till smooth but thick.
Step 7
Serve with croutons, sour cream, and/or Parmesan cheese.
