Step 1
In a crock pot, add chicken breasts or thighs, green enchilada sauce, corn, and chicken broth... Simmer on low heat for 6-8 hours.
Step 2
About 30 minutes before serving, remove and chop chicken. Add shredded chicken, jack cheese, cream cheese, 1/2 and 1/2, and green sauce to crock pot. Stir until cheese melts. *You can add additional sauce to taste.
Step 3
You can add sliced avocado, cilantro, green onion, and sour cream to slices, and add crunchy tortilla strips if you like!
