This is yumminess in a bowl! Perfect for a KETO lifestyle this soup is amazing! You won't believe you're on a 'diet' with this one! This should do 8 servings, however, if you're like me, one serving might not be enough! It will keep for a few days in the fridge - just reheat what you need gently. Let me know what you think.

Add your stock. I make approximately 1 pint of stock as I like my soup quite thick. So feel free to add more water if you want your thinner.

Turn the heat up to bring to the boil, then cover, reduce heat and simmer for about 20 minutes. If it gets too thick add more water.
