Keto Spicy Cream of Mushroom Soup

This is yumminess in a bowl! Perfect for a KETO lifestyle this soup is amazing! You won't believe you're on a 'diet' with this one!
This should do 8 servings, however, if you're like me, one serving might not be enough!
It will keep for a few days in the fridge - just reheat what you need gently.

Step 1
Sauté the chopped onions, crushed garlic, chopped chillies in a knob of butter.




Step 2

Add your chopped mushrooms & sauté for a few minutes.
Step 3

Add your stock. I make approximately 1 pint of stock as I like my soup quite thick. So feel free to add more water if you want your thinner.

Step 4

Turn the heat up to bring to the boil, then cover, reduce heat and simmer for about 20 minutes. If it gets too thick add more water.

Step 5
Remove from the heat and allow to cool.
Step 6

Add the double cream and blend smooth.


Step 7

Salt and pepper to taste.
Step 8

Gently reheat and serve up in a bowl. I love mine in a large mug - it certainly is "a hug in a mug"!
