Step 1
Mince two garlic cloves.
Step 2
Heat 1 tbsp olive oil in a non-stick frying pan over medium heat.

Add 2 cups cauliflower rice to the pan and sauté for 1-2 minutes. If using frozen cauliflower rice, sauté until any clumps are broken down.
Step 4
Zest the citrus fruit on top of the rice as it is cooking in the pan. Sauté for 1-2 minutes.
Step 5
Chop handful of cilantro.
Step 6
Add handful of cilantro to the rice as it is cooking in the pan. Sauté for 1 minutes.
Step 7
Serve.
