Buckwheat Crepes with Berries

Instructions
Step 1
In a small bowl, whisk together the buckwheat flour, salt, 1 Tbs coconut oil, almond milk, egg and vanilla until smooth.
Step 2
In a large nonstick skillet over medium high heat, melt the remaining coconut oil. Tilt the pan, coating evenly with oil.
Step 3
Ladle 1/4 cup of batter into skillet. Tilt until evenly coated.
Step 4
Cook for 2 minutes, or until edges begin to curl. Flip and cook for one minute on second side. Transfer to plate. Continue with remaining batter
Step 5
Top with 1/2 cup berries and 1 Tbs chia jam. Fold and repeat with remaining crepes
