Rich and Tangy Creamy Tomato Soup

This is just my take on a classic comfort foods. It takes its inspiration from one of the Vitamix tomato soup recipes with a few strategic additions and omissions. I like to play with my food. I hope you enjoy.

Ingredients
4 servings
1 ½ cupwater
or vegetable stock
1cube vegetable bouillon
or 1 tablespoon better than bullion vegetable stock concentrate if available
1 tablespoontomato paste
14 ouncecanned diced tomatoes
7 ozcherry tomatoes
1.5 ouncessun-dried tomatoes
don’t skip this
0.25red bell pepper
2 tablespoonsred onion
peeled, diced
1garlic clove
2 sprigsfresh thyme leaves
1 teaspoonfresh oregano leaves
or 3 - 4 drops oil of oregano
1 cupheavy cream
1 cupwhole milk
½ teaspoonsalt
1 tablespooncane sugar
4 dasheshot sauce
basil leaves
for garnish
1 Tbspgreek yogurt
optional for garnish
fresh ground black pepper
Instructions
Step 1
Place all ingredients into the Vitamix container in the order listed and secure lid.
Step 2
Select Variable 1.
Step 3
Turn machine on and slowly increase speed to Variable 10, then to High.
Step 4
Blend for 6 minutes 30 seconds, using tamper only if needed, until mixture is hot. Serve.
Step 5
If you don’t have a Vitamix or other high powered blender use any blender to purée ingredients and then transfer contents of blender to a saucepan and cook on medium heat until soup is hot but not boiling. Boiling will cause the cream to scald which degrades the nuances of the flavors and flattens the overall flavor of this soup.
Step 6
Garnish with basil leaves - slap once or twice to release essence and float on top of soup.
