Instructions
Step 1
Preheat oven at 180 degrees and cook salmon (or cook in whatever pan adding the lid to finish off for 5 mins)
Step 2
In a pan add the olive oil, sliced onion and red pepper. Allow to sauté for a few minutes
Step 3
Then add sweetcorn and kidney beans.
Step 4
Season with cumin,coriander and paprika, mix around
Step 5
In a bowl mash the avocado, then add sliced tomato and mix around
Step 6
Now start to build your tex mex bowl, add the avocado mix, jalapeños and hummus
Step 7
When salmon is cooked, pop into the bowl too along with the mix of beans, corn and pepper
