Instructions
Step 1
Preheat the oven to 190?C.

Step 2
Cut potatoes into thick slices (roughly 5mm) and parboil for 5 minutes, then drain.
Step 3
Add the chopped garlic, some pepper, butter and 1 tbsp of oil into the pot with the drained potatoes and mix well.
Step 4
Cook over a medium heat for 2-3 minutes.
Step 5
Heat 1 tbsp of oil on a non-stick pan.
Step 6
Sauté the onion with a pinch of salt for 2-3 minutes. Add the chicken pieces to the pan and cook for 10-15 minutes, or until they are almost done.
Step 7
Add the mushrooms, baby spinach, fresh oregano and cream and mix well.
Step 8
Spoon the chicken and vegetables into the casserole dish. Next, layer the garlic potatoes on top, then place the dish in the oven at 190?C for about 25 minutes, or until the potatoes are just cooked through.
Step 9
Remove from the oven and sprinkle the grated cheese on top. Place the dish back in the oven for 2-3 minutes to melt the cheese, then serve.
