Instructions

Step 1
PLACE the potatoes in a medium pot and add enough cold water to cov- er. Bring to a low boil and cook until tender, about 15 minutes. Drain.
Step 2
In a large bowl, whisk together the avocado oil, mustard, lemon juice, salt, and pepper.
Step 3
Add the potatoes, salmon, arugula, green onions, chives, and parsley.
Step 4
Gently toss until the potatoes are coated.
Step 5
Serve warm.
