Step 1
In a bowl crack your eggs and add some sea salt and pepper and set aside.

Thinly slice mushrooms and chop tomatoes into bite size pieces.

Heat a medium pan and coat with some cooking spray over medium-high heat.

Add in tomatoes, mushrooms and your greens ( kale or spinach)

Saute for 3 minutes and then pour your eggs over veggies

With a spatula slowly begin folding eggs and veggies together, allow eggs to cook thoroughly until no longer runny.

Add cheese on top and enjoy!
