Step 1
Preheat oven to 400 degrees. Prepare and season your tomato sauce with roasted garlic and onions.
Step 2
Spoon the tomato sauce into an individual-sized baking dish, or small cast-iron skillet, leaving a well in the center of the sauce for the eggs. Carefully add the eggs to the dish, one at a time, so that the yolks stay intact.
Step 3
Drizzle the cream around the sauce. Sprinkle with the Parmesan and herbs.
Step 4
Bake for 10-15 minutes until the sauce is bubbly, and the egg yolks are slightly runny and whites well done. Serve immediately with toast or an english muffin.
