GOAT’S CHEESE AND SPINACH EGG MUFFINS

A healthy breakfast option. Make sure to note temperature is 386 if you are using Fahrenheit!!! Also, I found for those, like us, who can’t have pepper, it desperately needs salt, more cheese or more seasoning.

Step 1
Preheat oven at 180 degrees
Step 2
Begin by adding all the eggs into a bowl along with the Italian herbs and pepper
Step 3
Mix with a fork until all eggs are combined
Step 4
Slice the spinach and tomatoes into small pieces then add to the eggs and mix around
Step 5
Then add your egg mixture to either silicone muffin cups (That’s what I used) or grease a muffin tin and add the egg mixture there instead
Step 6
Once all the mixture is in the cups, add the goats cheese. I added 3 small pieces of goats cheese roughly on top of each muffin
Step 7
Pop into the oven and bake for around 25 mins
Step 8
Egg should be cooked throughly and golden on top
Step 9
Serve straight away or keep in the fridge and enjoy later
