Instructions

Step 1
Lightly whisk eggs and a little pepper together. Pour into a non-stick pan over medium heat and continue to stir until egg is cooked through and is light and fluffy. Remove from heat.
Step 2
Add tomatoes, avocado and red onion to scrambled eggs and gently fold through.
Step 3
Place egg mixture in centre of half a large pita and roll to make a tasty breakfast burrito. Alternatively, open pita half into a pocket and fill wtih egg mixture.
