Instructions
Step 1
Start boiling water in kettle (enough for 200ml)
Step 2
Chop the 1/4 onion into fairly small pieces. Mix into small saucepan with the minced garlic and fry until soft and golden. About 3 mins.
Step 3
Add in the mix of spices (cumin, cinnamon, salt, pepper) and the flaked almonds and raisins. Continue to fry for another 2 mins or so.
Step 4
Add 0.5 stock cube to 200ml of the boiled water in a jug. Pour into the saucepan. Bring to simmer and then take off heat.
Step 5
Pour in the 160g of couscous. Stir. Cover and leave for 5 min for water to be absorbed. At the end, fluff it up with a fork.
Step 6
Sprinkle on some chopped parsley or basil. (Optional)
