Simple Lemon, Shrimp and Prosciutto Pasta

Ingredients
4 servings

8 ozAngel hair pasta
uncooked

2 ozprosciutto
thinly, sliced

¼ cupextra virgin olive oil
divided

4garlic cloves
thinly sliced

2 cupsmulti colored cherry tomatoes
halved

½ cupfresh basil
thinly sliced, divided

½ teaspoonkosher salt

¼ teaspooncrushed red pepper

12 ouncesshrimp
peeled and deveined tail on raw large

Instructions
Step 1
1. Cook pasta according to package directions. Drain and reserve One Cup of cooking liquid
Step 2
2. Cook prosciutto and two tablespoons oil in a large skillet over medium high, stirring often until crisp, three to four minutes. Transfer prosciutto to paper towels to drain
Step 3
3. Add garlic to pan, cook, stirring often until golden, one to two minutes
Step 4
4. Add tomatoes, 1/4 cup basil, salt and red pepper. Cook until tomatoes begin to release their juices, about four minutes
Step 5
5. Add shrimp, cook until opaque, three to four minutes. Stir in One Cup of reserved cooking liquid to thin sauce to desired consistency
Step 6
6. Halve one lemon. Squeeze juice from both halves into sauce
Step 7
7. Stir in pasta and remaining 2 tablespoons oil
Step 8
8. Cut remaining lemon into wedges and divide pasta evenly among four plates. Top with prosciutto and remaining 1/4 cup basil. Served with lemon wedges
