Instructions
Step 1
Boil red lentils (7-9 minutes)
Step 2
Rinse and cook 1 cup Jasmine rice (Basmati?)
Step 3
Heat 1 tbsp Olive Oil on medium-high. Once hot add diced onion and cook until it starts to soften (approx 5 minutes) and chopped garlic and cook an additional 2 minutes.
Step 4
Add spices and "bloom" for 1 minute.
Step 5
Add diced tomatoes, sauteed onions, garlic, and spices to a blender. Blend on high (or sauce setting) for approximately 45 seconds
Step 6
Add blended tomato sauce back to your pan, add cooked lentils, and heat to slow boil.
Step 7
Simmer for 10 minutes.
Step 8
While lentils simmer, fluff rice and portion into bowls (4 servings).
Step 9
Serve over rice

(Optional) If adding chicken, cube and cook in 1 tbsp olive oil until cooked through. Add back to tomato sauce when you simmer the lentils)
