Ingredients

6 poundsEggs frozen
whole, thawed

1 qtNonfat milk

1 ½ tspSalt
⅓ cupMargarine trans-fat free

1 Tbspdried parsley
Instructions
Step 1
Beat eggs thoroughly
Step 2
Add milk and salt. Stir well.
Step 3
Lightly coat steam table pan with pan release spray. Pour egg mixture in.
Step 4
Bake: Conventional oven: 350 F for 20 minutes. Stir once after 15 min.
Step 5
CCP: Heat to 165 F for 15 sec
Step 6
Remove from oven or steamer. Stir well. Eggs should have a slightly moist appearance.
Step 7
Add 2 1/2 tbsp margarine to each pan. Stir well.
Step 8
Garnish with parsley
Step 9
CCP; Hold for hot service at 135 F or higher
Step 10
For best results serve w/n 15 min
Step 11
If desired serve with 1/4 cup pico de gallo.
