Chicken & Spinach Skillet Pasta with Lemon & Parmesan

This one-pan chicken pasta combines lean chicken breast and sautéed spinach for a one-bowl meal that's garlicky, lemony and best served with a little Parm on top. I call it "Mom's Skillet Pasta" and she called it "Devon's Favorite Pasta." Either way it's a quick and easy weeknight dinner we created together and scribbled on a little recipe card more than a decade ago, and it remains in my weekly dinner rotation to this day. It's a simple dinner the whole family will love.

Instructions
Step 1
Boil water and cook the pasta according to the instructions on the package.
Step 2
While the pasta is cooking, cut the chicken into bite-sized pieces. Add a tablespoon of oil to a hot pan. Cook the chicken until golden brown on both sides. In the meantime, mince the garlic.
Step 3
Add the wine, garlic, lemon juice and zest to the pan with chicken. Bring down the heat so the liquids come to a simmer. Add a handful of spinach at a time until wilted. Add the pasta to let it simmer for 2 minutes. Season to taste with salt and pepper.
Step 4
Sprinkle parmesan cheese on top and serve.
