Step 1
Slice your Mozzarella and tomato

On a plate, stack the tomato, then mozzarella, then basil. Place to the side.

Poach your eggs
Step 4
Once the eggs are poached, pat dry any water off of the egg and place next to the tomato/mozzarella/basil.
Step 5
Sprinkle a pinch of ground black pepper and sea salt
Step 6
Drizzle a little of the balsamic reduction over the top
