Ingredients
4 servings
2 teaspoonsvegetable oil
or peanut oil
1sweet onion
diced
3garlic cloves
minced
1red bell pepper
diced
2carrots
peeled and diced
1 piecefresh ginger
peeled and grated
3 cupswhite rice
cooked
2 tablespoonstamari
or soy sauce
1 teaspoonsesame oil
crushed red pepper flakes
1 cupfresh pineapple
diced
½ cupfrozen peas
½ cupwhole roasted salted cashews
3green onions
sliced thin
fresh cilantro
for garnish

for garnish
Instructions
Step 1
Heat vegetable (or peanut) oil in a large skillet or wok over medium-high heat. Add onion and cook for 2 minutes; add garlic and cook for 1 minute.
Step 2
Add red bell pepper, carrots and ginger and cook for 3 minutes.
Step 3
Add cooked rice, tamari, sesame oil and crushed red pepper; stir gently to combine.
Step 4
Add pineapple, peas, cashews and green onion and stir again.
Step 5
Remove pan from heat. Garnish the rice with fresh cilantro. Serve drizzled with sriracha.
